Slow cooker sesame chicken

Leah from New Mexico asked us for a recipe for meal prepping with a slow cooker.

You have to know that slow cookers are ideal for that, they can save you a lot of time, and the slow cook can bring out the best flavor of any dish.

Slow cooker sesame chicken recipe:

Serves: 4

2 Skinless chicken breasts

1 Tablespoon of onion powder

2 Garlic cloves, minced

1/4 Cup honey

1/4 Cup soy sauce

3 Tablespoons tomato puree/sauce

1/2 Cup water

2 Cups broccoli florets, to serve

2 Cups long white rice, to serve

Toasted sesame seeds, to serve

– Place the chicken in the slow cooker

In a small bowl, add the garlic, onion powder, honey, soy sauce, tomato puree and water. Mix and pour over the chicken. Depending on your slow cook, cook on low for 4-6 hours. Adjust the time in order to not to dry out the meat.

– Start with the rice 20 minutes before you serve.

Bring 3 cups of water to a boil with a pinch of salt. Stir the 2 cups of long white rice, cover with a lid and turn the burner down to the lowest setting on your stove top. Set the timer for 20 minutes. When done, take off heat and let sit for 5 minutes before fluffing with a fork.

– Shred the chicken:

Remove the chicken from the slow cooker and shred it. Return the shredded chicken to the slow cooker and stir with the remaining liquid.

– Cook the broccoli:

In a pot, bring 2 inches of water to boil and steam broccoli for 5 minutes.

– Toast the sesame seeds:

In a dry frying pan toast the sesame seeds over medium heat for a bout 3 minutes. Shake the pan to make seeds do not burn. Remove them once they are golden-brown and toasted.

Place the broccoli over the rice on plate and top with the chicken/sauce mixture and sprinkle with sesame seeds.
