Meatless Monday: Vegan Burger With Cucumber Salad

Ingredients:
2.5 oz Cucumber
0.5 oz Onion
0.25 bundle Dill
1 oz Sweet potato
2.4 oz Chickpeas
0.2 fl oz Rice vinegar
0.2 tsp Baking powder
0.25 oz Sesame butter
2 Pinch Salt
1 Pinch Black pepper
1 tbsp. Olive oil

Directions: 
– Heat oven to 375 °F and coat a baking sheet with cooking spray.
– Boil the sweet potato. Chop cucumber, onion and dill, set aside and mix together with black pepper and rice vinegar.
– When the potato is soft, place the remaining ingredients in a blender. Form burger and place on the baking sheet. Bake the burger in the oven until dry and golden brown (around 8 minutes on each side).
– Serve with your cucumber salad.
